Recognized for utilizing only the freshest ingredients in daily specials on their “Fresh Sheet”, Humboldt has recently launched a new bar-specific fresh sheet focusing on releasing drinks weekly. The drive behind the cocktail sheet was to empower bartenders to exercise their freedom and creativity.
A recent fresh sheet was made up of concoctions such as the<strong>Violet Nail,</strong> a modern riff on the old Rusty Nail. Scotch, Drambuie, crème de violette are mixed with simple syrup and lemon juice.
The <strong>Spiced Paloma</strong> is tasty enough to become a staple on the regular drink menu. Equal parts of tequila and fresh-squeezed grapefruit juice (2 oz. each) are mixed with lime juice (1/2 oz.), jalapeno simple syrup (1/2 oz.), and then topped with citrus soda. The drink is perfectly balanced with spicy, sweet, and tart.
Humboldt’s ongoing cocktail menu has been crafted with considerable thought. One of the most popular <a href="http://www.examiner.com/topic/cocktails-17">cocktails</a> is the King of Montenegro. They created the <strong>King of Montenegro,</strong>featuring W.L. Wellers bourbon, amaro, lemon, Humboldt’s own house-made grenadine (reduced pomegranate juice, pomegranate molasses, and orange juice), and ginger beer which is then garnished with Luxardo cherry. The drink itself was prompted by the sweetly-bitter tang of the Italian herbal liqueur amaro.
Humboldt spent extensive time developing a drink to pair specifically with Washburn oysters farmed for them. As homage to its Boston namesake, they came up with <strong>The Union</strong>. The “Oyster Cocktail” is made with a Laphroaig scotch rinse, lemon bitters, and Pearl gin. When eaten with one of the Washburn oysters, the drink sparks the salinity of the bivalve.
While sipping away the day, a few of Humboldt’s most popular menu and happy hour food selections pair so well. Nibble on the <strong>Smoked Trout Dip</strong> served with homemade potato chips. Smoked trout is mixed with cream cheese and topped with a sweet onion jam.
The <strong>Humboldt Burger</strong> was awarded best burger by <a href="http://blogs.westword.com/cafesociety/2014/05/10_best_burgers_in_denver.php?page=3" target="_blank" rel="nofollow">Westword</a>. The burger features a balanced Crystal River grass fed beef-bacon blend, garlic aioli, and Tillamook cheddar. The juicy burger is topped with a thick pickle slice.
